Ingredients

  • 1 cup rolled oats
  • ½ cup almond butter (or peanut butter)
  • ¼ cup cocoa powder
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened shredded coconut (plus extra for coating)
  • 2 tablespoons chia seeds (optional, for added fiber)
  • 1 scoop chocolate protein powder (optional, for extra protein)
  • 2 tablespoons dark chocolate chips (optional, for a richer taste)

Instructions

Step 1: Mix the Ingredients

  1. In a large bowl, combine the rolled oats, cocoa powder, shredded coconut, chia seeds, and protein powder (if using).
  2. Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
  3. Mix well until all ingredients are fully combined. If the mixture feels too dry, add a tablespoon of water or almond milk.

Step 2: Shape the Energy Balls

  1. Scoop out small portions of the mixture and roll them into bite-sized balls.
  2. Roll each ball in shredded coconut to coat the outside.

Step 3: Chill & Enjoy

  1. Place the energy balls in the refrigerator for at least 20 minutes to firm up.
  2. Enjoy them as a quick snack, pre-workout energy boost, or healthy dessert!
