  • 2 large ripe bananas (mashed)
  • ¼ cup maple syrup or honey
  • 2 eggs (or flax eggs for a vegan option)
  • ⅓ cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil (melted)

  • 1 banana, sliced (for decoration)
  • ¼ cup dark chocolate chips or chopped nuts
  • 2 tablespoons almond flakes or shredded coconut

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch cake pan or line it with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk together oat flour, almond flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.

Step 3: Combine Wet Ingredients

  1. In another bowl, mash the bananas and mix with maple syrup, eggs, almond milk, vanilla extract, and melted coconut oil.

Step 4: Mix & Fold

  1. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing to keep the cake fluffy.

Step 5: Bake

  1. Pour the batter into the prepared pan and smooth the top.
  2. Arrange banana slices on top and sprinkle with dark chocolate chips or nuts.
  3. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
